With the warmer temperature here the last few days I decided to make something healthy, my cholesterol was high and I need to eat MUCH better so I do not have to take the medication for that!
I thought I’d share with you ladies for Spring and Summer, these are so good, you could add your favorite meat if you like-
I started with romaine lettuce wedges washed and chopped.
About 3 cups
One yellow bell pepper, washed and sliced thinly.
One small cucumber, washed and sliced thinly with skin on it.
Small avocado peeled and quartered, then sliced more and very thin
Fresh tomato washed. and sliced thinly
Apple Cider Vinaigrette
- 1/3 cup apple cider vinegar
- 1 garlic clove (grated or finely chopped)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tespoon Dijon mustard
- 1/2 cup extra virgin olive oil
Mix all veggies together then add dressing as desired I used 3/4 cup to my veggies on fresh baked sourdough bread. YUM
