My ChickPea Salad-

Ingredients for salad-

  • 2 1/4 cups diced cucumbers, partially peeled
  • 6 green olives without pimentos sliced (optional)  1 cup tomato, seeded and diced 1/4 cup red onion, diced  
  • 15-ounce can of chickpeas, rinsed and drained
  • Ingredients for the dressing I use
  • ¼ cup extra virgin olive oil
  • tablespoons balsamic vinegar
  • 1 ½ teaspoon honey
  •  1 small pinch Celtic salt ⅛ teaspoon black pepper I like to grind my peppercorns for corset pepper in this dish –
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon dried oregano  
  • ⅛ teaspoon garlic mince
  • using a hand whisk mix well and mix into salad
  • eat then or chill for later
  • This is great for weight loss as a lunch or dinner- I lost 10 lbs in one month eating this 4 times a week in place of a lunch or dinner..

  1. My husband loves chick peas, I make something similar when I do t feel like lettuce. I will try your dressing, sounds delicious

    1. It’s good to change it up. Remove one ad one more remove two ad two. Red bell peppers and corn are awesome. Roasting the chick peas are awesome. Using a creamy salad greasing is good. So many ways to make this delicious and healthy
