Ingredients for salad-
- 2 1/4 cups diced cucumbers, partially peeled
- 6 green olives without pimentos sliced (optional) 1 cup tomato, seeded and diced 1/4 cup red onion, diced
- 15-ounce can of chickpeas, rinsed and drained
- Ingredients for the dressing I use
- ¼ cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 ½ teaspoon honey
- 1 small pinch Celtic salt ⅛ teaspoon black pepper I like to grind my peppercorns for corset pepper in this dish –
- ⅛ teaspoon onion powder
- ⅛ teaspoon dried oregano
- ⅛ teaspoon garlic mince
- using a hand whisk mix well and mix into salad
- eat then or chill for later
