Stuffed Pepper Soup

  • 1/2 lb lean ground beef
  • 1 medium onion finely chopped
  • 1 green pepper finely chopped
  • 1 red pepper finely chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 2 cups chicken broth
  • 1 can (14.5 ounce) chopped tomatoes
  • 2 tablespoons Italian seasoning
  • 3/4 cup uncooked quick cooking rice
  1. Ina stock pot on medium heat brown ground beef, add the onions and bell peppers once the beef is about 1/2 done; stirring we;; several times once the meat is done reduce heat to medium low and add minced garlic; stirring constantly. Drain any excess grease.
  2. Add beef broth, chicken broth and chopped tomatoes and bring to a simmer.  Simmer for 15 minutes or until the peppers just begin to soften.
  3. Add the rice and stir well… Cover and cook for about 10 minutes or until rice is done. Serve then. I serve mine with the Paula Deen Vidalia Online cornbread muffins, they are awesome. I’ll like that recipe here too, for this interested It says cornbread, but, I make mine in a large muffin tin, YUM
