- 1/2 lb lean ground beef
- 1 medium onion finely chopped
- 1 green pepper finely chopped
- 1 red pepper finely chopped
- 2 cloves garlic minced
- 4 cups beef broth
- 2 cups chicken broth
- 1 can (14.5 ounce) chopped tomatoes
- 2 tablespoons Italian seasoning
- 3/4 cup uncooked quick cooking rice
- Ina stock pot on medium heat brown ground beef, add the onions and bell peppers once the beef is about 1/2 done; stirring we;; several times once the meat is done reduce heat to medium low and add minced garlic; stirring constantly. Drain any excess grease.
- Add beef broth, chicken broth and chopped tomatoes and bring to a simmer. Simmer for 15 minutes or until the peppers just begin to soften.
- Add the rice and stir well… Cover and cook for about 10 minutes or until rice is done. Serve then. I serve mine with the Paula Deen Vidalia Online cornbread muffins, they are awesome. I’ll like that recipe here too, for this interested It says cornbread, but, I make mine in a large muffin tin, YUM
