Tomato Pie/ with fresh garden tomatoes-

My Cover photo is my friend Sherry’s Pie, So, I decided to give it a try. Mine was awesome but I thought hers looked better so I put it for the cover photo to this recipe. I did add tomato slices and herbs to the top of mine 🙂

Tomato Pie I Donnak

Recipe

  • 1 (9 inches) deep-dish pie crust
  • 4 large tomatoes, peeled and sliced
  • ½ cup chopped fresh basil
  • 3 green onions, thinly sliced
  • ½ pound bacon – cooked, drained, and chopped 
  • ½ teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper
  • 2 cups shredded Cheddar cheese
  • ¼ cup mayonnaise

Directions

  • Step 1Preheat oven to 375 degrees F (190 degrees C).
  • Step 2In alternating layers, fill pastry shell with tomatoes, basil, scallions, bacon, garlic powder, oregano, and red pepper. In a small bowl, mix cheese with mayonnaise. Spread mixture over top of the pie. Cover loosely with aluminum foil.
  • Step 3Bake in preheated oven for 30 minutes. Remove foil from the top of the pie and bake an additional 30 minutes. Serve warm or cold.
  • One of my FB friends is a wonderful cook, I truly admire Sherry. The cover photo is of her Tomato Pie and I saw it posted and thought hmm I am going to use some of the tomatoes my sweet neighbor gave me and make my own.
  • White Sherry’s looks much better I will say that mine was very good. I thought some of you that have access to fresh garden tomatoes might want to try this recipe.

  1. I am so glad I found your blog and fb page again! I loved Oh So Shabby by Debbie back when my children were in college and I was a caregiver for my mother. I’ve been sidetracked with work and grandchildren so during this pandemic, I decided to try to find the blogs I followed several years ago. So sorry for your website and facebook problems. Looking forward to seeing your posts again!

    1. I make.this. I slice the tomatoes.and drain them on paper towels.for.10 minutes. One of my favorite summer recipes.
